Sweet Potato Breakfast Bowl Recipe

One word. YUM.

Thank you for joining me on my very first food blog post! If you have been following my IG stories lately, I have been making some very yummy sweet potato breakfast bowls. And if you know me, you know that I LOVE sweet potatoes... a little too much. I may be turning into one! 🙈
This little recipe has been my go-to breakfast. And it's just so good to me that I wanted to share it with you! It's wholesome, it's hearty, it's full of natural flavors and sweetness, and would you look at those colors?! I also love this breakfast because it's filling in the best way, and it usually takes me all the way to lunch. It only takes about 10 minutes total to make.
When I was living on-campus for school, a sweet potato and microwave always came in handy. You can become quite creative when you're limited! So, now, living off-campus at home again, this particular recipe actually came about when I was just in the kitchen of my home one morning, looking around for what to eat for breakfast. I noticed we had an array of things. I spotted our fresh blueberries, sweet potatoes, bananas, we had some cinnamon in the cabinet and some crunchy toppings in the pantry. I thought to myself, "Hey, with a little almond or peanut butter, that sounds like a pretty good combo!" So, with a little chop, a little drizzle, and a little sprinkle, the sweet potato breakfast bowl was born.
Something else I really like about this recipe is that it's healthy. You can have a naturally sweet breakfast with ingredients that have no added sugar (depends on what kind of shredded coconut you use). The sweet potato, banana, and blueberries are all sweet naturally, and the almond butter with the cinnamon and the added crunch kind of gives it that nice, down-to-earth feeling. I find that it's nicely balanced and not too sweet.
And here are the ingredients & recipe just for you :)
THE BEST SWEET POTATO BREAKFAST BOWL
Ingredients
1 small sweet potato (or 1/2 of a large sweet potato)
About 1/2 of a large banana
1 heaping tablespoon of organic almond butter (or any other nut butter you'd like)
1/4 cup (or a nice handful!) of fresh blueberries
Cinnamon (amount to your liking)
Unsweetened (or sweetened) shredded coconut
*Or any other alternative toppings of your choice. E. other nuts, fruits, seeds, raisins, granola, etc... It's your bowl!
Recipe
Total Cook Time: approximately 10 minutes

1. Chop your sweet potato into good, bite-sized squares or pieces. Place the chopped sweet potato a microwaveable bowl. Optional: you can add little pieces of butter to your bowl for the potato to cook in if you'd like.
2. Cook your chopped sweet potato in the microwave for between 4.5-5.5 minutes (or until cooked). It depends on how much and how thick the pieces are. I recommend using a fork and checking at about 4.5 minutes. Careful, the bowl is going to be hot!
3. While your sweet potato is cooking, go ahead and chop up your banana and prepare your toppings.
4. When the sweet potatoes are ready, add your banana to the bowl. Then, sprinkle as much cinnamon as you desire (Not gonna lie, I usually do a gooood amount of cinnamon). Gently stir the mix around and add a little more cinnamon as needed.
3. Then, add 1 heaping tablespoon of almond butter (or a nut butter of your choice) and drizzle it on! I really like to use the organic almond butter from Costco! Stir. You'll find that the hot sweet potato helps melt the nut butter and spread it around more easily. (Ahh the gift that keeps on giving - a blessing, indeed).
4. Once the nut butter is evenly spread and mixed through, add your toppings: slivered almonds, fresh blueberries, and shredded coconut (and/or any toppings of your choice - but I definitely recommend the blueberries)! :)
5. Finally, give thanks & enjoy your breakfast bowl!

[Another fun combo that reminds me of autumn is using chopped apples with a little brown sugar and candied pecans (which isn't as healthy with the refined sugar, but it is delightful, nonetheless).
